The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. EHS observed a new active managerial control practice in place. Facility has started maintaining temeprature logs for the freezer and refrigerator in order to monitor that the units are maintaining the correct temperatures. No violations observed, keep up the great work !

02/13/2015Routine
  • Critical: Date Marking of Refrigerated, Ready-to-Eat PHF (TCS Food) (corrected on site)
    Observation: The following refrigerated, ready-to-eat, potentially hazardous food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: Sour cream, Whipping cream.
    Correction: Refrigerated, ready-to-eat, potentially hazardous commercially processed foods when opened and kept for more than 24 hours cannot have a shelf-life of more than 7 days, including the day of the original container was opened. These food items must be marked with either the "consume-by" date and/or "preparation" date, color-coded labels, or another marking system/method that effectively indicates shelf-life that is clearly understood and properly used by the employees. This date cannot exceed any manufacturer determined "use-by" date based on food safety. (sour cream and whipping cream were date marked during the inspection.)
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside refuse container was uncovered. The side sliding door was opened and the top covers were not properly in place
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.
  • Refuse / Area / Clean
    Observation: Trash and litter were observed adjacent to the refuse container/dumpster fenced area outside the facility.
    Correction: A storage area and enclosure for refuse, recyclables, and returnables shall be maintained free of unnecessary items and kept clean.
  • Refuse / Dumpster / Covers & Lids / Construction
    Observation: The cover of the refuse container located outside the establishment is not a tight fit. The top covers are broken.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables used with materials containing food residue and used outside the food establishment shall be designed and constructed to have tight fitting lids, doors, or covers. Repair the broken covers or replace the dumpster.
  • Cleaning Frequency for Physical Facilities (repeated violation)
    Observation: Observed that the floor drain located under the 3-compartment sink and the drain pipes from the 3-compartment sink are in need of cleaning to prevent pest such as fruit flies, presence
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

  • Modifications to FDA Food Code/Section 4-205.10, Equipment Certification
    Observation: The following items are intended for household use only and are not approved for use in a commercial food establishment: white Kenmore upright refrigerator located in the kitchen.
    Correction: Food equipment that is certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program will be deemed to comply with Parts 4-1 and 4-2 of this chapter. Food equipment in a food establishment shall be certified of classified by an ANSI-accredited certification program, an equivalent certification program, or approved by the Regulatory Authority before installation and/or use. Replace the unapproved noncommercial freezer.
  • Lighting Intensity/ Food Prep Area / 50 foot candles
    Observation: Observed that inadequate lighting was provided in the food preparation area under the hood system. The light bulb under the hood has burned out.
    Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas. replace the burned out light bulb.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the floor under the 3-compartment sink next to the grease trap is in need of cleaning. This area is soiled with debris and dirt.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food. Clean all areas of the floor more often and properly to prevent attracting pest.

    Observation: The door gasket of the reach-in freezer is damaged and does not seal tight causing ice build-up on the freezer door rim
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
  • Single-Service and Single-Use Articles / No Reuse (corrected on site)
    Observation: Manufacturer containers of yogurt were observed reused for the storage of other types of foods.
    Correction: Manufacturer containers may not be reused for secondary storage of other foods because the containers are not durable enough for multiple reuse and become uncleanable.

  • 3-Compartment Warewashing Sink Requirements
    Observation: One of the compartment at the 3-compartment sink has been disconnected at the piping beneath the sink and is not usable. Operator is presently using only two of the compartments.
    Correction: A sink with at least 3 compartments shall be provided for manually washing, rinsing, and sanitizing equipment and utensils. Repair this sink immediately.
  • Critical: Permit to Operate Required, Must be Posted, Must be Valid
    Observation: The food establishment's Permit to Operate is no longer valid due to expiration of the permit on December 31, 2012. No person shall operate a food establishment unless that person possesses a valid permit issued by the Health Department.
    Correction: To obtain the 2013 Permit to Operate, contact the Health Department at (703) 246-2444 within 48 hours to make payment of the permit renewal fee. You may provide payment by cash, check, or credit card. Failure to pay the permit renewal fee and obtain the 2010 Permit to Operate within 48 hours may lead to further enforcement actions by the Health Department including immediate closure.
  • Critical: Plumbing / Maintained in Good Repair
    Observation: Plumbing connections under the 3-compartment sink piping are leaking.
    Correction: A plumbing system shall be maintained in good repair.
  • Refuse Areas / Enclosures / Receptacles / Good Repair
    Observation: The dumpster sliding door is in disrepair.
    Correction: Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair. Repair the broken dumpster door or replace the dumpster.
