The purpose of today's visit was to conduct a routine inspection.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the floor/wall juncture, walls and the sides and doors of all cabinets in the kitchen is in need of cleaning.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food. CLEAN FLOOR/WALL JUNCTURE, WALLS & ALL CABINET DOORS AND EXPOSED SIDES OF CABINETS.

The purpose of today's visit was to conduct a risk factor assessment inspection. EHS provided manager with and discussed (for future reference) the following handouts: cooling log, sign and methods.

The purpose of today's visit was to conduct a routine inspection. Lunch served at 11:00 am. Note to manager, please share with all food employees who work in kitchen to update the date marking of potentially hazardous foods once they are thawed to reflect the remaining number of days before discarding is required. EHS provided a date marking handout and Food for Thought Newsletter titled "What is Date marking" that discusses how to date mark before and after freezing and thawing a product.
  • Hair Restraint Effectiveness
    Observation: Food Employee observed working in the food service area without proper hair restraints.
    Correction: Food employees shall wear hair restraints such as hats, visors, hair nets or beard nets to effectively keep their hair from contacting exposed food, clean equipment, utensils, linens, and unwrapped single-service items. This section does not apply to food employees such as counter staff who ONLY serve beverages and wrapped or packaged foods, hostesses, and wait staff.
  • Handwashing Signage at Handwashing Facilities Required (corrected on site)
    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at handwashing sink in employee restroom used by food employees.
    Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands. PROVIDED EXTRA SIGN TO MANAGER.

NOTES:
* The purpose of today's visit was to conduct a routine inspection.
* There was no CFM available during today's inspection. A CFM card must be obtained and faxed to Fairfax County Health Department at (703)385-9568.
* Fairfax County Employee Health Policy was given to manager at time of inspection.
* A work-order has been put in for the 3-vat sink sanitizer basin to repair a minor leak.
* All critical violations should be corrected as soon as possible and not later than 12-12-13.
  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC (repeated violation)
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
  • Critical: Certified Food Manager/Presence Required
    Observation: There is no Certified Food Manager present in the establishment.
    Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a certified food manager. It is highly suggested that you have more than one employee with the food manager's license. ORS Interactive, Inc. (see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in closure of the establishment. Discussed with manager. Facility manager must fax copy of CFM card prior to 12-12-13.
  • Refuse / Dumpster / Covers & Lids / Construction
    Observation: The door of the refuse container located outside the establishment is not available.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables used with materials containing food residue and used outside the food establishment shall be designed and constructed to have tight fitting lids, doors, or covers. Discussed with manager.
