    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Partly consumed employee lunch stored in such a way as to possibly contaminate food in restaging chicken warmer.
    Correction: Provide separate area for employee lunches so as to not contaminate working containers of food.

    Observation: The food worker is drinking from an uncovered container in the food preparation area.

    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: 1) shelf on area where chicken buckets/single use containers are stored 2) bottom shelf of 3 door traulsen freezer 3) outside of warmer for restaging chicken
    Correction: Maintain nonfood-contact surfaces of equipment clean. Clean today and as often as needed to keep clean
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility near the front line is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the boxes preventing its use.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Floors of establishment especially under equipment and in walk in coolers in need of detail cleaning Mop sink area in need of detail cleaning, mold growth observed on wall. .
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner. Correct within one week.
