6/20/13 Received complaint and watched video sent in to accompany it. Met with manager regarding complaint of worms in chicken. Checked temperatures of walkin cooler that stores chicken. Walkin cooler is at 40F, within proper limits. Checked all "kill dates" on chicken in store. Recieved documentation of standard operating procedures regarding "use by dates" and "discarding" chicken. At this time, all chicken in facility in within dates specified by the "kill date." Had manager take samples of cooked chicken and verified that the current chicken in hot hold does not appear to be contaminated. Hot hold temperatures aree within proper limits. Went over proper handling and receiving of chicken with manager. Chicken is recieved at 41F or below and verified by staff upon arrival. Chicken is then placed in walkin cooler in boxes received. Once boxes are opened, chicken is placed on trays and new "use by" dates are placed on each tray. Verified "use by" dates were within proper time frames. Spoke with general manager on phone regarding complaint. A this time, all chicken appears to be within time and temperature regulations.
