Floor/wall surfaces throughout the kitchen and under the cook-line observed in need of cleaning. Exterior of the dry storage bins in need of cleaning. A light in the hood system was observed not working. Surfaces under and beside the frying equipment in need of cleaning. Area under and around the 3-compartment sink observed in need of cleaning. Remember to properly air dry equipment/utensils. Develop an effective daily cleaning program. Storage shelving and tables throughout kitchen in need of cleaning. Some damaged floor tiles and coving observed. Walk-in refrigerator and walk-in freezer observed in need of cleaning. Storage room SD-13 was also checked. The lighting in the storage room was dark and several holes were observed in the wall surface. Due to the pattern of violation, a Notice of Violation (NOV) will be issued. A follow-up will be conducted on or about October 14, 2014.

The objective of cleaning focuses on the need to remove soil from nonfood contact surfaces so that pathogenic microorganisms will not be allowed to accumulate and insects and rodents will not be attracted.
