Discussed the following with the person in charge (PIC): 1. Observed large gaps in one ventilation hood filter. Repair or replace the filter. 2. The reach-in cooler was not in use at the time of inspection. 3. Provide a fine probe (1.5 mm or less) metal stem thermometer to measure internal temperatures of thin meat patties. 4. Observed ice placed into the hopper with the ice cream mix. The PIC stated that ice should not have been placed into the hopper with the ice cream mix. The PIC instructed staff to discard the ice cream mix in the hopper, clean and sanitize the hopper and add new mix. 5. The PIC thinks that the increase in the temperature of the walk-in cooler is due to employees leaving the door open when entering the unit. Upon arrival (10:08 AM) the ambient temperature of the unit was recorded at 38°F. Continue to monitor the temperature of the walk-in cooler to ensure that the unit is capable of holding foods at or below 41°F as the unit may need to be serviced. The PIC stated that they are required to record the temperature again at 1:00 PM and then one more time later that day.

Time is used as a back up method to temperature control for cold and hot foods. Observed timers set for 3 hours and employees indicated that all food is discarded when timer goes off.
