Water was not turned on at handsink today. You must have this working at all times. There is a leak in the water pipes at the handsink. Repair. Coolers with ice and drinks must be self-draining. Open up the drains. Bread is being stored outside. You must store your supplies on board. Calibrate your thermometers.

    Observation: It appears that hands were not washed in mobile unit today. Water was not turned on, no soap available.
    Correction: This to be corrected immediately.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Cheese sauce was 99 F.
    Correction: Maintain 135 F. Reheat to 165 and then hold at 135 F. Cheese sauce was put back onto grill.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Food temperatures inside reach in refrigerator were found elevated. Hot dogs at 42.9 F.
    Correction: Unit was turned down. Monitor your temperatures.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: Food thermometer found dirty.
    Correction: Clean and sanitize.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the mobile unit.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

  • Plumbing System Maintained in Good Repair
    Observation: No power available on-site so the unit must run on generator power. Generator cannot support both refrigerator and water pump, so the water pump was off upon arrival.
    Correction: Water must be available for handwashing at all times during operation. Supplement refrigerator with ice if needed. When power is available, all equipment can run normally. Bigger generator may be needed.

Facility was not operating at the time of this inspection. We discussed water supply and waste water removal. Need to protect food grade hose in storage and get a tank (like the RV tanks) for waste water removal. Waste water must always be disposed of in sanitary sewer (mop sink). Make sure employees wash hands frequently even if they put on gloves. Provided copy of duties of PIC. Permit issued.
