  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) (repeated violation)
    Observation: Chlorine sanitizing solution in dish machine was not at an acceptable concentration.
    Correction: Sanitize using compartment sink until dish machine can be serviced and verified to maintain proper concentration of chlorine. Monitor chlorine in dish machine daily with chlorine test strips..

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Tubing from sanitizer bottle to dish machine has chlorine crytals, sanitizing solution is not getting to dish machine.
    Correction: Implement manual sanitization of all food contact utensils/dishes until dish machine can be serviced and verified to sanitize at minimum of 50ppm.
