If time is to be used for cooked sausages (discarded at the end of lunch), a time control policy must be in place (printed and given to PIC). Facility is now only open until 2PM.

Correction: Foods must be cooled quickly. Leave uncovered, stir often, separate into shallow pan and/or ice bath to facilitate cooling.
