    Observation: The following foods were observed cold holding at improper temperatures: milk on the breakfast bar measured 50*F and Cut fruit on the breakfast bar measured 52*F. The breakfast bar will be set up on a time as a public health control.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Food - Food Labels (corrected on site)
    Observation: Consumer self-dispensing bulk food bins containing cereals are not properly labeled. Person-in charge will label the cereals with the common name of the cereal and have the ingredients list available upon request.
    Correction: Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: 1. the manufacturer's or processor's label that was provided with the food or, 2. a card, sign, or other method of notification that includes the information specified in this section.
  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: The dumpsink next to the dishmachine is not sealed to the adjoining wall.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
  • Equipment - Non-Food Contact Surfaces and Utensils (corrected on site)
    Observation: The interior of the bulk ice machine and upslash of the coffee machine were observed soiled with accumulations of grime and debris. Person-in charge cleaned all the equipment during the inspection.
    Correction: Clean the equipment at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Diced tomatoes cold holding at improper temperatures. PIC relocated the tomatoes to another cold-holding unit.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Handwashing Lavatory, Water Temperature, and Flow (corrected on site)
    Observation: Water from the handwashing sink on the prep line was measured at a temperature less than 100°F. Water measured 84'F. PIC adjusted the cold water pipe and placed a work order to have the sink repaired.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

The caulking at the coving throughout the kitchen facility has been adjusted to ensure there are no gaps. The two reach in coolers at the bar are now operating properly.
This facility is in substantial compliance and is eligible for a permit from the Virginia Department of Health. The permit will be issued upon receipt of a copy of the certificate of occupance.

Site visit made to facility to inspect the new 2 bar RIC's which were not operating during the pre opening inspection conducted on December 18, 2013. Advised by PIC that the compressors on these 2 undercounter RIC's are burned out. The new compressors are on order and are expected to arrive at facility on December 24, 2013. A final inspections regarding these RIC's is scheduled for December 26, 2013.

2. Adjust the caulking at the coving throughout the kitchen facility to ensure that there are no gaps
3. Ensure the two Victory Reach In Coolers at the bar are working properly in order to hold potentially hazardous foods at 41'F or lower

1. Extend the drain pipe under the 3 compartment sink to ensure water does not overflow on the floor
2. Provide handwashing signs at all handwashing sinks throughout facility including employee's restroom
3. Install a self closure at the employees' restroom
4. Submit a copy of the Building Department's Certificate of Occupancy
5. Remove all construction equipment from the kitchen facility
6. Provide a detailed and thorough cleaning to include sanitizing all equipment
A reinspection is scheduled for December 18, 20013 at 9:00 am.

__X_ Approved: Construction/renovation plans for this establishment, as submitted on June 12, 2013 appear to be within compliance of requirements of the Virginia Department of Health.
As discussed with the Person In Charge: an additional handsink will be installed in the dishwashing area.
__ Not Approved: Plans for this establishment, as submitted on June 12, 2013 do not clearly provide for all items required by the Virginia Department of Health. These items are described in the attached letter to the responsible individual.
Please note that all items are subject to a final inspection. I reserve the right to make additional requirements at the time of the inspection for items that were not shown on the plans.
