The purpose of today’s visit was to conduct a routine inspection. No violations observed during today's visit. Observed employees wash hands using proper technique 6 times during today's visit. The sanitize basin and wiping cloth buckets observed with acceptable levels of Quaternary ammonium. Observed separate area for dented cans being used properly (6 dented cans stored and segregated from non-dented cans). Observed facility clean and organized. All equipment temperature logs are acceptable. Although this visit was conducted early and the reheating processes were not observed, the temperature logs for reheating foods are maintained from previous days. Thank you. The purpose of this visit is to conduct a routine inspection. Observation of burritos (50f, 45f) placed into the beverage air milk chest cooler along the back wall. Discussion with foodworker revealed that the product was trayed at 9:30am and placed into the chest cooler. Because the burrito's were held at 50f and 45f, assessment of the functioning of the Beverage air chest cooler was needed. The burritos were moved back into the three door upright cooler 38f to cool since the time of temperature taken on burritos was at 10:30 am. Beverage air chest cooler was determined to be capable of holding foods at 41f or below as the ambient air inside was 40f. Remember to maintain potentially hazardous foods at 41f or below and do not place out on countertops until ready to prep. Based upon time and temperature, the burrito were placed back into refrigeration into a cooling state and cooled to 40f during today's visit. Thank you.
