    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Cold holding at improper temperatures: cream cheese is stacked too high in container. Cream cheese on the top is in the 50's.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Cream cheese out of temperature discarded during inspection.

    Observation: There was no temperature measuring device located in the refrigerator.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Additional frozen container provided for storage of cream cheese and butter on continental breakfast line. Stoppers for sinks provided. Went over wash,rinse, sanitize procedure with employee including setting up the sinks and doing dishes with him.

Gravy was on counter at 10:05 AM and it was reported to me that it was going to be discarded. I informed manager that it must be discarded after use or cooled properly. Manager maintained that the procedure is to discard the gravy every day after breakfast is done.

    Observation: Unauthorized personnel such as the complainant and her party using a banqet room were allowed to use the food preparation, food storage, or warewashing areas.
    Correction: Remove unauthorized personnel. The person in charge shall not permit persons unnecessary to the food establishment operation in the food preparation, food storage, or warewashing areas.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
    Observation: Three compartment sink being used with only the wash compartment being used and no final rinse sanitizing step being preformed.
    Correction: Follow proper procedure for using the three compartment sink. Procedure is posted on wall above sink.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the wall behind microwave has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Critical: Plumbing System Maintained in Good Repair*
    Observation: A recent repair to plumbing system components of the three compartment sink faucets have cold water handles missing are not in accordance with law.
    Correction: All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment.
