    Observation: A manufacturer's container (margarine tub) was observed reused for the storage of a house-made dry herbs mixture.
    Correction: Discontinue the reuse of manufacturer containers for food storage. Provide approved reusable food storage containers designed for your food storage needs.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed minor accumulations of encrusted grease deposits or other soil on one or two of the shelves in the reach-in cooler.
    Correction: Clean and sanitize these surfaces for food contact.

    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Paint or otherwise seal the wood

    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent, such as by replacing with impervious material or by painting.

    Observation: Light bulbs (fluorescent tubes) in warewashing area ceiling fixture were not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield, or replace fluorescent tubes with coated or shatter-resistant tubes.

    Observation: Less than 20 foot candles of light was noted in the warewashing area. (Fluorescent bulbs flickering but do not come on fully.)
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms.
