- The heat lamp is not supporting hot holding of 135 F and above. Replace the lamp or use alternative hot holding unit.
- Ensure that reheated commercial processed food reaching 135 F or above if used for hot holding (hot dogs, burgers, nuggets, strips, etc.)
- Purchase more test strips to ensure proper concentration of sanitizer.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Cheese burgers and hot dogs hot holding at improper temperatures under the heating lamp. Food was relocated.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.

Notes:
Chick-fil-A sandwiches and nuggets served for lunch today. Operator ordered only certain amount of food enough just for one day.
Thermal sticker left for operator to run dish machine and check the final rinse temperature. Dish machine takes about 2 hours to complete a cycle.
Sanitizing solution available in 3 vat sink.
FDA 1-B form provided.
Please eliminate the number of people(teachers) who can enter the kitchen.

Notes:
The Kitchen Aid dish washer is not reaching 165 F on final rinse, all equipment and utensils can be washed in dish washer, but get sanitized in sink compartment with bleach and water solution at proper concentration of 50 - 100 ppm.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The dish washer temperature test strip did not turned orange.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Bleach solution being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Bleach solution tested > 200ppm.
    Correction: Utilize only 50 - 100 ppm that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces

  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The ready-to-eat (RTE) commercially processed chili and cheese sauce in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
