- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: general cleaning of flour bin storage cabinet - some of the debris may be from the movement of the drawers and then falling onto storage areas of cabinet.
Correction: Maintain nonfood-contact surfaces of equipment clean.
- Floors, Walls, and Ceilings - Cleanability (repeated violation)
Observation: Floor or floor covering in kitchen area at the ice cream cooler area is not smooth and easily cleanable. Conduit for lighting is not separated from wall and will trap dirt. The shelf areas in the old windows that were closed are not smooth and easily cleanable (rough/crevices) - these areas are to be used for storage.
Correction: Repair floor/wall shelf coverings to make them smooth (crevice-free) and easily cleanable. Separate the conduit to lighting from the wall.
- Outer Openings - Protected
Observation: Outer opening of the food establishment is not protected against entry of insects and rodents - outside entry doors or entrances from other parts of building that are not protected.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Observation: The nonfood contact surface of the storage cabinet base is not nonabsorbent and/or smooth - seal wood base.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
- Floors, Walls, and Ceilings - Cleanability
Observation: Parts of the floor or floor covering and walls/ledges in the kitchen are not smooth and easily cleanable. There are rough areas along floor/wall junctures, under the water heater and ledges. The levelers under the cabinet are not cleanable. The water heater is leveled partially above a rough floor making the area beneath uncleanable - going to place a floor/wall juncture base around the water heater to seal the floor area beneath. All conduits/plumbing that run parallel to the floor must have separation from wall in order for dirt not to be trapped.
Correction: Repair, replace, or install floor/wall or floor/wall covering to make it smooth and easily cleanable where needed - install floor/wall junctures where needed. Wood wall areas and post are to be sealed to be easily cleanable. Conduits and/or plumbing - separated from wall or properly covered to preclude dirt accumulation at interface where meets the wall.
