  • Critical: Sewage Disposal System - Approved Sewage Disposal System* (corrected on site)
    Observation: Per discussion with the person in charge, all mop water is being disposed of outside on the ground surface next to the water supply. Advised PIC that all mop/grey water must be disposed of in the septic system. PIC stated that all mop water will be disposed of in the toilets and the facility will consider installing a mop sink.
    Correction: All liquid waste is to be disposed of in an approved sewage disposal system, either public or private.

The above observations and the following were discussed with the person in charge:
-Employee health policy.
-Shell eggs in the facility are used for baking purposes only.
The kitchen and all equipment was observed to be very clean and well maintained, thanks!

  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Wiping cloths observed to be stored on the prep table. Sanitizer bucket measured at 0 ppm. The PIC refreshed the bleach sanitizer bucket to 50 ppm and placed all wet wiping cloths in the bucket during the inspection.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

The above observations and the following were discussed with the person in charge:
-Strongly recommend the person in charge attend a food safety class, handout provided.
-Ensure anything stored on the floor in the pantry is placed on the shelves provided.
-Replace the molding along the wall in the boy's restroom.
-Gasket on the 2 door reach in cooler is becoming worn, replace as needed.
Handouts provided: Minimum Cooking Temperatures, Food Safety Class, Handwashing Sign, Thermometers

    Observation: Employees are not properly trained in food safety as it relates to their assigned duties. The person in charge could not stated appropriate cooking temperatures of foods such as raw chicken and raw hamburger. Discussed attending a food safety class with the PIC and provided handouts on minimum cooking temperatures of foods.
    Correction: Train all employees in food safety as it relates to their assigned duties.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as deli meat or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as deli meat and fish filets.
  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: The handsinks in the rest-rooms are no longer sealed to adjoining equipment or walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

The above observations and the following were discussed with the person in charge:
-Strongly recommend the person in charge attend a food safety course, handouts provided.
-Employee health policy discussed. Handouts provided.
-Please replace the trim sealing the floor/wall next to the back door of the kitchen.
-A work order is in place to replace the seal along the bottom of the screen door of the kitchen.
-All mop water is being disposed of in the toilets.
-PIC provided test strips used to test bleach sanitizer. The facility is using a quaternary ammonium sanitzer in the 3 compartment sink. Please provide quaternary ammonium test strips for the Steramine Tablets.
-Proper hot holding procedures and reheating procedures discussed for vegetables.
Facility observed to be very clean and well maintained, great job by all staff members!

    Observation: Plastic cups were found stacked while wet after cleaning and sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of sanitizer and moisture that may encourage microbial growth.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Vent filters in the hood system are not being maintained in a clean condition.
    Correction: Maintain hood system vent filters in a clean condition.
