Unit was not in operation during inspection and minimal food was present. Food suppliers are Tom's Meats and Sam's Club. BBQ is a commercial pre-cooked product, and is reheated and hot held during service. BBQ is only cooled for carry over if there is an event the following day and a large enough volume leftover. Discussed reheating, hot holding and cooling. Hamburgers and chicken tenders are received raw, frozen and cooked directly from frozen state. Fish is thawed prior to cooking. Per PIC, all food is served fully cooked. Discussed cooking temperatures and information observed posted. Discussed employee health and EHS provided Form 1B. Fire extinguisher serviced 5/ 2014 and grill vents observed properly working. Quat sanitizer and test strips present. Unit is self contained and all food prep completed within unit per PIC. Unit observed clean and organized. PIC to send EHS copy of updated service area agreement and water sample, if applicable, prior to permit renewal.

Menu discussed: Chicken, French fries, onion rings, bbq - premade, fish - raw frozen, crabcakes, hotdogs and buffalo wings - precooked. Only raw item is fish. Grease disposal is Valley Protein at old commissary location. Fire extinguisher and vent system needs checking/cleaned.. All cooking equipment runs off propane. Generator is used for hot water, turn water on, electricity of generator and RIC. All food prepped in unit so no commissary needed. Once at home - uses outside electrical cord to plug in RIC. Everyday goes to store and gets items needed. Service area is Small Country Campground. Used for grey water and fresh water and fro cleaning of unit. Corrections to be made and follow up before next event.
