    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

  • Food Storage Containers - Identified with Common Name of Food (repeated violation)
    Observation: Observed unlabeled containers of sugars and flours in the downstairs kitchen dry storage closet.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Temperature Measuring Devices
    Observation: There were no temperature measuring devices located in the Frigidaire Wine Cooler upstairs that contains food and the downstairs Whirpool refrigerator and freezer .
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The thin tip probe thermometer in the downstairs kitchen was not working.
    Correction: Replace the battery in the thin tip probe thermometer to restore a state of condition that allows for proper operation. If unable to replace the battery in the thin tip probe thermometer, replace it with a new thermometer.

    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets. Recommend obtaining one for the upstairs concession stand and one for the downstairs kitchen area.

    Observation: The nonfood contact surface of the exposed wood of the inside of the cabinets in the downstairs kitchen and the holes where the pipe enters and exits the cabinets is not designed or constructed to be easily cleanable.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Paint or seal the exposed wood of the cabinets and fill the holes in around the pipe that enters and exits the cabinets.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the homestyle refrigerator/freezer in the downstairs kitchen.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a Chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Fixed Equipment, Elevation or Sealing (repeated violation)
    Observation: There are two floor mounted stoves in the downstairs kitchen that are not elevated off the floor or sealed to the floor. A cleaning hazard exists.
    Correction: Alter the installation of the equipment to allow easy floor cleaning. Make 1 of the following corrections: 1. Remove the equipment 2. Install casters 3. Elevate the equipment to a minimum of 6 inches off the floor 4. Seal the equipment to the floor
  • Equipment and Utensils, Air-Drying Required
    Observation: The cleaned dishes and utensils were found stacked while wet after cleaning and chemical sanitization on an absorbent wet cloth mat.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Floors, Walls, and Ceilings - Cleanability (repeated violation)
    Observation: The ceiling in the downstairs mop sink closet is not smooth and easily cleanable since it is not finished.
    Correction: Repair or replace ceiling to make it smooth and easily cleanable.
  • Floors, Walls, and Ceilings, Utility Lines (repeated violation)
    Observation: Exposed utility service line or pipe behind the beer cooler that goes through the cabinets is directly against the wall which obstructs or prevents cleaning of the wall.
    Correction: Put the pipe behind the beer cooler on one inch standoffs on the wall to allow access to the wall for cleaning.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed (repeated violation)
    Observation: Floor wall juncture in the upstairs concessions area and the upstairs mop sink closet is not coved and closed to no larger than 1/32 inch space.
    Correction: Cove floor wall juncture to no larger than a 1/32 inch space or simply use silicone to seal the floor wall juncture.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory in the downstairs kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

    Correction: Repair and maintain all plumbing components and fixtures by moving the ice machine condensate line to completely drain to the open site drain.

    Observation: There is no covered trash can container for the disposal of feminine products in the ladies room stall near the downstairs kitchen.
    Correction: Install a covered trash can container for the disposal of feminine products in the ladies room stall near the downstairs kitchen.

    Observation: The floor or floor covering in the concessions area underneath the coke beverage dispenser and the floor near the open site drain underneath the ice machine in the downstairs kitchen is not smooth and easily cleanable.
    Correction: Repair, replace, or finish the floor or floor covering to make it smooth and easily cleanable underneath the coke beverage dispenser in the concessions area and underneath the ice machine in the downstairs kitchen.

    Correction: Cove floor wall juncture to no larger than a 1/32 inch space or seal the floor wall juncture by using silicone.

Stated electrician installing an extra light above the bathroom stalls in the rest-rooms today
Need to Complete the following within thirty days before the first routine inspection:
Downstairs Kitchen
Elevate the two cook top stoves six inches above the floor onto approved legs or casters for ease of cleaning
The floor around the open site drain needs to be finished, sealed, and a smooth surface for ease of cleaning
The pipe for the three compartment sink against the wall needs to be on one inch stand offs for ease of cleaning between the pipe and the wall
There is no cove base
Need to fill in holes where pipe enters and exits cabinets
Need to clean the refrigerator and freezer
Need to finish the ceiling and seal the floor in the dry storage closet
Need to finish the mop sink closet ceiling and apply a cove base around the mop sink
Note: For the time being, the ceiling tiles that are already installed can be used until the ceiling tiles become soiled to sight and touch and then need to be replaced since the ceiling tiles should be smooth, non absorbent, and easily cleanable.
Concessions
The floor where the open cabinet space is and under the beverage cooler needs to be finished, sealed, and a smooth surface for ease of cleaning
Need to seal the floor in the dry storage closet
