    Correction: Remove food from the unit and make necessary corrections to unit before using unit to cold hold foods. Unit may need to be repaired or adjusted to hold food colder.

    Observation: Observed foods stored in unit that was not capable of cold holding at appropriate temerature. Ham and eggs stored in nonfunctioning refrigerator. Items were transferred to different unit.
    Correction: Relocated foods to unit capable of appropriate cold holding temperatures. Make necessary repairs to unit before using as a cold holding location.

    Observation: When timed, the automatic shut off faucet at the handwashing sink located at mens bathroom did not provide a flow of water for at least 15 seconds without the need to reactivate the faucet.
    Correction: Adjust or replace the faucet to provide water tempered to at least 100°F and for at least 15 seconds.

The Center Line Cooler observed holding a ambient temperature of 55 degree temperatures. Relocate foods to a unit capable of proper cold holding temperatures. Food preparation area observed to be improved after removal of old air conditioning unit and recent cleaning of surfaces in the area. The old equipment was accumulating debris and grease. .

Monitor the temperature of the egg batter at the chicken tender cooking table. The ice bath should have ice in contact with bottom of the pan holding the eqq batter. This was discussed with manager at time of visit.
The facility is showing improvements in cleanliness. The deep fry area observed to be cleaner. The hood above the grill appeared to be cleaned recently. Employees are very kind and open to answer my questions during my viist.
