Discussed with the PIC for the need to monitor refrigeration temperatures. Also, the ice machine was taken out of service earlier today and maintenance will be working to fix a problem with condensate from the motor leaking into the ice bin. The ice bin will be washed/rinsed/sanitized prior to being placed back into operation.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Containers of Deli Meat (Ham) cold holding at improper temperatures in the undercounter RIC under the microwaves.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch with baked on food debris: baking pans.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: There was no temperature measuring device located in the reach-in cooler under the microwaves or in the reach-in cooler under the sandwich make table.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following utensils were observed soiled to sight and touch: Ice Cream scoops beside the dipper well.
    Correction: Clean and sanitize these surfaces for food contact.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The ceiling tiles and lights in the food preparation area were observed with accumulations of dust hanging down from them and are in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: The thermometers in the reach-in cooler and walk-in cooler are not in good repair and/ or not accurate in the range of use.
    Correction: Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use.

No violations were found during this inspection. Observed proper hand washing and proper handling of ready to eat foods. PIC is also knowledgeable about their employee health policy and general food safety knowledge (reheating temps, time as a public health control, ect.) I also looked at their temperature tracking logs required for time as a public health control. We also discussed a better way to properly cool sausage gravy before it is placed into the walk-in cooler. An ice bath was recommended for rapidly cooling along with utilizing shallow pans with no more than 2" of gravy in them so that it can cool quickly.
No violation noted during this evaluation.
