  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: The top portion of the ice machine is not spaced in a manner that allows accessibility for cleaning, nor is it installed with closely abutting surfaces to minimize the need for cleaning.
    Correction: Space the unit to allow access for cleaning along the sides, behind, and above or space the unit so that it is not more than 1/32 inch away from adjoining equipment, walls, and ceilings to minimize the need for cleaning.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Ice machine was observed in a state of disrepair and damaged.
    Correction: Repair the machine to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Mechanically vented hood filters not in good repair or have gaps in between filters.
    Correction: Repair or replace hood filters and/or eliminate gaps between filters.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: beverage tubing and nozzles and moveable portion of the ice machine.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities in Good Repair
    Observation: Hand sinks are not sealed to the wall, tiles behind hand sink are buckled outward. Junctures where the walls meet are not sealed, an area noted where the floor and wall juncture is not sealed.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
