Observed overall clean facility. Discussed the following with the person in charge:
1. Menu items are primarily commercially pre-cooked and reheated for lunch service.
2. Reviewed cooling procedures and parameters.
3. Reviewed employee health policy, and provided employee health and hygiene booklet.
4. Food suppliers are Walmart, Sams Club, and BJs.

Discussed the following with the person in charge (PIC):
1. Food sources are Sam's Food Club & Walmart.
2. All foods are purchased ready to eat or precooked and then reheated for service. No eggs are served at this facility.
3. The ceiling tiles for the kitchen (to replace several water damaged) have already been purchased but have not been installed yet. The PIC plans to install them as soon as possible.
4. The menu for today is grilled cheese, carrots (raw), and fruit.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: The person in charge (PIC) observed handling ready-to-eat (RTE) food, grilled cheese sandwiches, with her bare hands. The PIC had washed her hands prior to handling the sandwiches. The PIC immediately put on some disposable gloves.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

Observed the overall facility very clean and well organized.
  • Physical Facilities in Good Repair
    Observation: The following physical facilities are not maintained in good repair: 1.several areas of the floor in the kitchen have chipped paint, 2. several ceiling tiles observed water damaged.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Reseal the floor and replace the ceiling tiles.

Very clean, well organized facility. * Foods cooling after service and prep 1 hour ago. Doors open in sliding door RIC, causes thremometerto register higher.
