    Observation: A black residue was observed on the back wall of cabinet below the juice machine.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

The above items have not been corrected. The breakfast food in the large cooler in kitchen is not being maintained at 41 degrees or less. The amount of food in the cooler is very limited but it must still be maintained at 41 degrees or less. The correct labeling of chemical bottles needs to be corrected to help prevent food contact surfaces from being contaminated by chemicals that are not approved to be used on food contact surfaces. This could lead to cross contamination. A follow-up inspection will be conducted.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: Cut fruit, including melon, cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Toxics - Common Name/working Containers of Toxics* (repeated violation)
    Observation: A spray bottle that the kitchen staff stated was dish soup are not properly labeled as the label on the spray bottle read, "Odor Counteractant".
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

Correct the above items today. Make sure the person running the kitchen knows what temperature the food needs to be held to keep it safe. Make sure the spray bottles are labeled correctly so that staff knows what is in the bottle to help prevent chemicals from getting into food. A follow-up inspection will be conducted next week.
