- Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
Observation: The water temperature in the manifold servicing the high temperature ware wash machine was above the maximum allowable level of 194ºF. The thermometer read 195.
Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

- Critical: Self-Service - Consumer Self-Service Operations* - Raw, Unpackaged Animal Food
Observation: consumer self service salad bar for students had tongs that were falling into the salad and the students were touching the salad to retrieve the tongs creating a potential contamination issue.
Correction: consumer self service operations shall be provided with suitable utensils or effective dispensing methods that protect the food from contamination. (Smaller pans to prevent tongs from falling inside or serve the salad in a bowl to prevent the potential for contamination from hands or utensils that fall into the salad.)

Observation: Observed single use plastic ware not individually wrapped in a tray with out the mouth or lip piece protected from contamination during self service.
Correction: Single service single use articles and cleaned and sanitized utensils shall be handled, displayed and dispensed so that contamination of the mouth and lip contact surface is prevented, B) and knives, forks, and spoons that are not pre-wrapped shall be presented so that only the handles are touched by employees and by consumers if consumer self service is provided(single use items were changed to a container with the handle up)
