some temps are creeping up - may just be because units have been open during lunch rush, but watch temps carefully and adjust units as necessary to maintain 41 F, even during lunch rush... discussed food safety certification, discussed organization of shellstock tags, discussed consumer advisory (exists but needs upgrade)

    Correction: Keep pizza dough wrapped until it is used so that it is not in direct contact with water or ice. Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water because of the nature of its packaging, wrapping or container or its positioning in the ice or water.

    Observation: The mac and cheese was not reheated to 165F within 2 hours to eliminate pathogenic bacteria.

    Observation: gravy hot holding at improper temperatures.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.

    Observation: The nonfood contact surface of the ice cream freezer door (cracked with holes) is not designed or constructed to be easily cleanable. Also, hand towel dispenser cover is missing.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Replace hand towel dispenser cover.
