    Observation: Surfaces of the evaporator splash plate in ice maker interior was observed soiled with accumulations of grime and debris.
    Correction: Clean the interior surface at any time when contamination may have occurred, or per manufacturer specifications.

    Observation: Self-closing device required on back kitchen door.
    Correction: Protect the food establishment against the entry of insects and rodents by solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: The chicken fajita mixture measured 130 degrees F upon receipt by the caterer
    Correction: the TCS food item showed evidence of previous temperature abuse upon receipt. The operator rapidly reheated the food product.
