    Observation: A pan of chicken & dumplins being stored in the walk-in refrigerator > 4 consecutive hours were not cold-holding <= 41 F. (the internal food temperature was 44 F)
    Correction: The refrigeration technician inspected the walk-in cooler and verified that the unit is maintaining a cold-holding temperature at 38 F. The person-in-charge will look into the possibility that the refrigeration door is not completely closed after each use.

    Observation: An employee was observed working in the warewashing area without a proper hair and beard restraint.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
  • Critical: Cooling* (corrected on site)
    Observation: Shepherd's pie, corn puree, and shepherds pie puree were noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: (The foods were not cooled below 70 F within the first 2 hours of the 6-hour cooling process. The foods were reheated and properly stored for cooling in the refrigerator.) Cool potentially hazardous foods from 135°F to 70°F within 2 hours and from 70°F to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Critical: Food - Potentially Hazardous Food: Cold Holding*
    Observation: A pan of chicken & dumplins being stored in the walk-in refrigerator > 4 consecutive hours were not cold-holding <= 41 F. (the internal food temperature was 44 F)
    Correction: The chicken & dumplins were voluntarily discarded. The refrigeration technician was notified to ensure the refrigeration unit is capable of cold-holding foods <= 41 F. No foods requiring time/temperature control for safety will be stored in the walk-in refrigerator until the refrigeration technician verifies that the unit is properly working.
  • Cooling, Heating, and Holding Capacities (corrected on site)
    Observation: The stainless steel food pans were being stocked with foods past the pan's fill line.
    Correction: Do not stock foods past the fill lines located 1" below the lip of the stainless steel pans. Overstocking the food pans may inhibit the food's ability to maintain the proper hot and/or cold holding temperature.

Observations: The warewashing machine's hot water sanitizer booster heater is in disrepair. The warewashing machine's technician has installed a chlorine sanitizer feed for the machine's final rinse cycle until the booster heater can be replaced. A build-up of frozen condensation was observed in the 2-door stand-up freezer. It is in the process of being repaired. Any food items that may have come in contact with the condensation build-up were voluntarily discarded and the rest of the foods were transferred to the walk-in freezer.

    Observation: Cutting knives were being stored behind the counter-mounted knife holder.
    Correction: Store utensils such as knives in their proper dispensers.
  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: Fryer baskets were in disrepair.
    Correction: New fryer baskets will be ordered to replace the exixting fryer baskets.
  • Light Bulbs Protective Shielding
    Observation: Light bulb in 2-door True refrigeration compartment was not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.

PIC has good food safety knowledge. Food handler cards on file. Good method for washing raw vegetables observed. Kitchen maintained clean and organized at time of inspection.
  • Critical: Food - Potentially Hazardous Food: Cold Holding* (corrected on site)
    Observation: Raw fish being stored on bottom shelf of reach-in were observed cold holding at improper temperatures. PIC iced down fish and relocated it to other part of unit.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Kitchenware and Tableware (corrected on site)
    Observation: Juice cups were observed handled by mouth part. PIC rewashed the whole rack and retrained employee on proper handling.
    Correction: Store @TABLEWARE@ with food or lip-contact surface facing downward to prevent contamination prior to use.
