Checked hood cleaning schedule on hood. Informed by manager that hood system scheduled in October for next cleaning. Facility recommended for permit renewal. Food permit and copy of application issued to manager.

    Observation: Two large containers of fried rice noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods prepared from ingredients at ambient temperature to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

    Observation: Bucket of wiping cloth sanitizer registered above proper concerntration level.
    Correction: Adjust wiping cloth sanitizer to register at proper concentration level of 50ppm.

    Correction: Obtain chlorine test strips so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Manager need to sign up for September recertification class. Copy of 2014 Food manager class schedule, copy of online and regular food handler class information given to manager. Viewed food handler cards. Cards viewed are current. Spoke with manager concerning temp logs that are posted on side of True reach-in unit. Recommended for permit. Food permit will be issued once application and fee is processed.

Frigidaire fridge gauge turned up between 5-6. Unit was set at 4 on gauge. There are no phfs stored in bottom of unit. Regular scent bleach used as sanitizer. Informed manager to contact BFPE concerning updating fire extinguisher. Continue to monitor and record temperatures of units/ product daily on temperature log. Refrigeration is holding at proper temperatures. Product is holding at proper temperatures. All permits and certifications are posted.

Certified food manager has Regional FSE certification issued on 6-30-13 and expires 6-30-16. Hood system is current per sticker posted on front of hood system. Continue to monitor and record temperatures on temperature log daily. Spoke with manager and employee concerning test strips and concentration level when using bleach. Informed by manager that application was filled out and mailed in with permit fee. Facility recommended for permit. Informed manager once application and permit fee is processed, food permit will be issued.

    Observation: Wiping cloth sanitizer registered below required concentration. Sanitizer registered at 10ppm.
    Correction: Adjust wiping cloth sanitizer to register at proper concentration of 50ppm.

    Observation: Opened metal cans of product stored inside True reach-in fridge.
    Correction: Remove opened metal cans of product from inside of True reach-in fridge. Once metal cans are opened, any unused food from metal cans need to be stored in proper containers and labeled before placing in refrigerator.

    Observation: Observed accumulations of grime and debris on the following food contact surfaces: fryer and wok unit
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Observed plastic container stacked wet.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Refuse - Areas, Enclosures, and Receptacles, Good Repair
    Observation: The waste storage container has a missing lid.
    Correction: Replace the missing lid for the waste storage container used to hold trash and debris. Contact dumpster company to have lid replaced.
