Facility will no longer be cooking food products for students. PIC stated the main kitchen will no longer be in operation -- observed refrigerator removed -- handsink is still observed. Renovations will be complete before the school year begins. Observed food handler cards and health policy. Did not observe temperature charts in use for the refrigerator in use in Classroom 1. Observed only one classroom in use during the summer sessions of school. Display CFM certificate with health department permit in public view.

    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) Sargento shredded cheese (May 2015) in the refrigerator, the food should have been discarded 3 months ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Water from all handsinks was measured at a temperature less than 100°F. The only exception was observed in Upper level classroom 2 with 104'F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Observation: There is no covered refuse container for the disposal of feminine napkins in the main staff restroom.

The 3 classrooms upstairs were not accessible during the inspection due to testing. All cold holding units/refrigerators need to be maintained at <38' or below. Observed food handler cards for all teachers. Did not observe food temperature charts for classroom #1, #4. Observed food temperature charts for main kitchen, classrooms: 2, 3, 5. Provided new employee health policy, and CFM class schedule.

    Observation: The person in charge failed at being a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program or responds correctly to the EHS's questions as they relate to the specific food operation.
    Correction: Ensure that the person in charge has a valid certified food protection manager certificate and/or correctly demonstrates knowledge of the food operation as it relates to the EHS's questions.

Some refrigeration units were observed >38F due to recent lunch time. Discussed the expiration of the CFM certification. Observed food temperature charts for the main kitchen. Observed well maintained restrooms. Provided CFM class schedule and new application for permit renewal.
