This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. Thank you. The following issues require attention:
1. Please ensure that all food employees are washing their hands before putting on new gloves. Employees must wash their hands before engaging in food preparation and any time after possible contamination including: After handling soiled equipment or utensils, During food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks
  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: Observed a food employee fail to wash their hands before putting on new gloves. .
    Correction: All food employees shall be washing their hands often especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, before putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness. Instructed food employee to wash their hands before putting on new gloves.
  • Cooling Methods (corrected on site)
    Observation: Cut melons were on the salad self serve bar at 50-52°F and had been prepared within 2 hours.
    Correction: Time/ temperature control for safety foods prepared from ambient temperature must be cooled from 70F to 41F within 4 hoursTo facilitate cooling foods from ambient temperature please place food in a shallow pan or container and leave uncovered until temperature has reached 41°F. This will allow air to circulate and cool the food. Please ensure that the cut melons are cooled to 41°F before putting them out on the salad bar as this unit is not designed to cool food. Melons were taken to the back walk in refrigerator to cool properly.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: Feta cheese in open display case measured at 41-46°F and piled very high in unit.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. Please reduce the amount of products on display to ensure that temperatures are maintained at 41°F or below. Person in Charge instructed food employees to reduce the amount of cheese on display and relocate others to walk in refrigerator
  • Handwashing Sink / Accessible at All Times (corrected on site)
    Observation: Observed that the handwashing sink in the produce prep room was blocked with cases of watermelons.
    Correction: A hand washing sink shall be maintained so that it is accessible at all times for employee use. Cases of watermelom were removed from around the handsink.
  • Handwashing Signage at Handwashing Facilities Required (corrected on site)
    Observation: Observed that a handwashing reminder sign is not provided in the mens restroom in the staff break room.
    Correction: Provide a sign or poster at all handwashing lavatories used by food employees to notifiy them to wash their hands. A handwashing sticker was provided to the Person in Charge to place in the mens restroom.

This visit was made to conduct a pre-opening inspection of the grocery, dairy, frozen and teh beer and wine section. The following items require attention:
1) Install baseboards/kickplates throughout section. (will be done at end of project).
2) Hose reel to be installed in dairy walk-in cooler.
Section is approved for loading in grocery items, dairy, frozen foods and beer and wine.
Approved for "grocery" permit.
Any changes to the floor plans must be pre-approved by the Alexandria Health Department.
