Monitor all refrigeration units to ensure proper cold holding temperature of 41 F or below. The ceiling tiles observed in the kitchen are not smooth, easily cleanable and nonabsorbent. The hood vent filters are in need of cleaning. The floor surfaces throughout the facility and the interior of all refrigeration/freezer units observed in need of cleaning. Provide a working stem thermometer for measuring hot and cold food temperatures. Facility does not have a mop sink. Manager states that soiled water is dumped in the warewashing area floor drain. The vent cover in the men's rest-room was observed missing. Carpet in dining area is in need of cleaning.

    Observation: A food employee was observed cleaning his/her hands in the back 2-compartment sink in the warewashing area.

Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Effective measures must be taken to control their presence in food establishments.
  • Cleaning, Frequency and Restrictions
    Observation: The walls, under and behind equipment are not cleaned as often as necessary to keep them clean. Built up grease was observed on the walls.
    Correction: Physical facilities shall be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
