- Outer Openings - Protected
Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Fly screen frames on window directly over 3 vat utensil sink, does not fit/secure tightly. This results in a gap of sufficient size to allow entry of flies and other flying insects.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. (replace, adjust, seal or repair fly screens (SHORT TERM) OR replace windows with more modern and secure window system (LONG TERM) Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. Effect repairs within 6 months of inspection date.

Notes: *Talked with manager about posting the employee health policy to enable staff to access it as needed. *The lighting covers in the kitchen that need repair/cleaning are not something the cafeteria staff can accomplish on their own due to the height of the lighting. Suggest having maintenance come in while the kitchen is closed to repair and remove dead flies. *If left over food is to be saved, proper cooling procedures need to be followed and cooling logs implemented and added to the other HACCP documentation for the facility. *The walk in freezer was a nice improvement!
- Critical: Cooling* (corrected on site)
Observation: Gravy and speghetti observed noted not being adequately cooled to prevent the growth of harmful bacteria. Both items were tightly covered in the reach in cooler. Reminded staff to use proper cooling techniques and any food in the process of cooling in the refrigeration unit should be left uncovered until it reaches 41 degrees.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
- Physical Facilities in Good Repair
Observation: Some of the light covers for the lighting fixtures in the kitchen are broken and being held on with with wire. Observed a large build up of flies in the covers of many of the light fixtures. These need to be repaired and cleaned.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
- Toxics - Presence and Use Restriction (corrected on site)
Observation: Unnecessary poisonous or toxic materials (pesticide) found in the food establishment.
Correction: Remove unnecessary poisonous or toxic materials. Pesticides should not be stored in the establishment and only applied by a licensed pest control operator.
