Inspection report was discussed with the person in charge. It was discussed that the ice maker should be repaired or removed. Sanitizing of all dishes and utensils should be done manually using the 3 compartment sink for the sanitizing step while the warewash machine is momentarily out of order. Operator was instructed to immediately contact warewash machine vendor to repair unit.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F.

    Observation: The cavity of the microwave oven is observed soiled.

Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow.     Observation: The prepared ready-to-eat (RTE) foods in the refrigeration unit were not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

    Observation: Food contact surfaces of the food slicer and can opener used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues.
    Correction: Clean food-contact surfaces of food slicer and can opener no less than every 4 hours to prevent the growth microorganisms on those surfaces.

Inspection conducted regarding complaint. Complaint was discussed with the administrator/ operator. Per conversation with Administrator/operator, a new pest control agency, Ecolab, has been hired. They have recently added 17 vector control devices through out the facility. Controller boards have been installed at the back outside door of kitchen/dining area. No evidence of excessive flies in the kitchen/food prep area during the inspection.
No violation noted during this evaluation.
