Observation: Salad bowls and small beverage cups were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

- Temperature - Food Temperature Measuring Devices - Provided (repeated violation)
Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

Note: Have a work order with maintenance to fix the hole in the wall and wall junction near the mop sink and employee rest-room as well as to replace the light that is out in the dry storage room. Also, management said their will be an additional hot bar cart that should be coming in July to use in the dining area to make it easier on serving food.
- Warewashing - Mechanical Warewashing Equipment, Sanitization Pressure
Observation: The pressure gauge for the high temperature warewash machine was reading 33 PSI which is above the maximum requirement of 25 PSI.
Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements by having the dish machine serviced. The range for proper operation is between 15 and 25 PSI. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.
