  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: deli case, hood filters, fans in walk-in fridge.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Critical: Handwashing - Using a Handwashing Lavatory* (repeated violation)
    Observation: The handwashing facility located next to the 3 compartment sink is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the mop bucket and boxes preventing its use.
  • Refuse - Maintaining Refuse Areas and Enclosures
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.

    Correction: Discard or return food products once the packaging is damaged or is in bad condition. Food packages must be in good condition to protect the integrity of the contents so that food is not exposed to adulteration or potential contaminants.

    Observation: Food stored on the floor. Or Food stored less than 6"" above the floor in the walk-in fridge and along aisles of store.
    Correction: Elevate food storage onto approved shelving with minimum 6"" legs or casters.

    Observation: Door of Kenmore Freezer was observed in a state of disrepair and damaged.

Left FHC Schedule, CFM Schedule, and new Federal Form 1Bs. Owner stated he will would retest for CFM. Recommend renewal of Health Dept. Permit. Permit application completed on site.

    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a Precision Chlorine Test Paper test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Spoke to CFM via phone in regards to inspection. CFM stated that no cooking has been taken place in kitchen since Fire Marshall placed a Red Tag on the hood system. Hood system is being converted at this time. Kitchen will re-open when Fire Marshall confirms that establishment has electrical permit.

    Observation: Unwrapped or uncovered food in the Fogel Freezer.
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.
  • Food Storage - Clean and Dry Location (repeated violation)
    Observation: Food stored on the floor. Or Food stored less than 6"" above the floor (throughout aisles and in the walk-in fridge).
