    Observation: The temperature measuring device in the bulk meat display cooler was not properly located in the warmest part of the unit.
    Correction: Relocate the temperature measuring device to the warmest part of the refrigeration unit to properly represent the ambient air temperature.

    Observation: Containers of all purpose cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of all purpose cleaners must be located in an area that is not above food or stored with, equipment, utensils, linens or single service items.

    Observation: Dispensing utensils improperly stored between uses--utensils as steam table stored in water at 89* and utensils on make table stored in water at 73*
    Correction: Corrected. Advised when storing utensils in hot water, water to be at 135*. On make table, advised to store in a clean empty container or in the food product with the handle out of the food.
  • Good Repair and Calibration of Thermometers (corrected on site)
    Observation: Thermometer inside the True refrigerator is broken (the ambient air thermometer on the exterior of the unit is not accurate).
    Correction: Corrected. Ensure thermometers are in good repair and accurate.

    Observation: Single-service forks and spoons at self-service counter not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination
