    Observation: Observed raw fish stored over hush puppies in the sandwich prep unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory at the end of the sandwich prep units.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: Observed spray bottles of chemicals that were not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of hazardous products must be located in an area that is not above food, equipment, utensils, linens or single service items.

This establishment is in substantial compliance with the Virginia State rules and regulations regarding restaurants. Therefore permit is issued. Post your permit in an area where the public can see it.

Discussed the following with the owner:
1. consumer advisory (*) is not identified beside the foods that will be served undercooked - please revise the menu
2. manager's certification - the food handler's assessment class is not considered a certified manager's course - please register for the manager's class
3. plumbing - contact the building department in reference to the installation of the additional hand sink
The plan review packet and application you submitted on February 5, 2015 and March 9, 2015 have been approved.
All items are subject to final inspection. I reserve the right to make additional requirements at the time of the inspection for items that were not shown on the plans.
The facility will need at least two (2) inspections prior to opening. A pre opening inspection is scheduled for March 23, 2015 at 9:00.
