Spoke with certified food manager concerning correct test strips needed and proper hair restraints to be worn while working with food. Monitor sandwich unit door on right side for air flow. Manager to fill out application and send in permit fee of $40. Facility recommended for permit. Food permit will be issued once application and permit fee is received.

Observation: Employees observed working in the food service area without proper hair restraints.
Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

Observation: There is no test kit located in the facility for monitoring the concentration of the chemical (Qac) sanitizing solution.
Correction: Obtain a chemical test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: Less than 20 foot candles of light was noted in back area near walk-in cooler and ice machine.

Spoke with certified food manager about application and permit fee for Health permit. Observed good personal hygiene practices by staff. Overall facility is clean. Facility recommended for permit renewal. Informed manager once application and permit fee is received and processed, Health permit will be issued.

Correction: Alter or replace this equipment so that the filters can be easily removed for cleaning and replacement. Clean and sanitize hood filters.
