- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Spilled honey was observed on the floor under the metal storage shelves. Also noted an accumulated equipment storage, in the rear prep/wrapping area.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The operator provided a metal probe thermometer, quaternary ammonium test strips and an Employee Health policy during today's inspection. The operator provides on site classroom food preparation and transports the equipment and food items to the classroom sites.

Observation: The handwash station at the rear warewashing area is being used for purposes other than washing hands ( a drink dispenser was observed in the hand sink basin)

Note: The operator stores and transports food products, which will then be prepared by the classroom students, as part of a healthy education instruction. The Kenmore refrigerated compartment of the reach-in cooler/freezer is currently being utilized to store non TCS/PHF food products (ie raw produce, condiments and fruit) due to the elevated ambient air reading. The operator will continue to monitor the refrigeration unit. The operator provided a metal probe thermometer,chlorine test strips and a review of an Employee Health policy occurred at this time.
- Plumbing System Maintained in Good Repair
Observation: Plumbing connections under the sanitizing compartment of the three compartment warewashing sink was leaking.
Correction: Plumbing systems and components shall be maintained in good repair.
- Handwashing Signage/Handwashing Facilities
Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees (warewashing/rear prep area).
Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

Note: An accessible hand wash sink shall be installed immediately in the warewashing area (a disconnected hand wash sink was observed on the floor by the warewashing area). Facility has adequate Employee Health policy and metal probe thermometer during today's inspection. Non-critical violation should be corrected within 30 days.

Observation: There is no properly working chlorine test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

- Temperature Measuring Devices
Observation: There was no temperature measuring device located in the cold holding units.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
- Equipment - Fixed Equipment, Spacing or Sealing
Observation: The 3 vat manual washing sink is not sealed to adjoining walls.
Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
- Critical: Backflow Prevention*
Observation: A direct connection exists between the drain line of the sanitizing basin of the 3-vat sink and the sewer line.
Correction: Eliminate the direct connection between the sewer line and the cited equipment.
- Refuse - Covering Receptacles
Observation: Dumpster or outside refuse container does not have a tight fitting lid in good repair.
Correction: Provide means to properly cover the dumpster with a tight fitting lid..
- Toilet Rooms - Enclosed
Observation: Toilet room door is not provided with a self-closing door
Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
