    Correction: Provide a temperature measuring device that is easily readable and accurate to +/-3 degrees Fahrenheit in the intended range of use.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a @SANITIZING AGENT@ test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Owner/Manager has provided a separate kitchen area for the preparation of foods for the continental breakfast. The owner has installed a 3 compartment equipment wash sink, separate hand sink (soap and disposable towels) and covered the walls and floors so they are easily cleanable. The area will only be used for the preparation and storage of foods and single service food articles, The menu will consist of heat and serve type foods. There was no food service in operation during this inspection.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chlorine chemical sanitizing solution. Drain plugs were available for only one compartment of the three compartment equipment wash sink.
    Correction: Obtain a Chlorine sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level. Drain plugs should be available for all compartments of the sink to assure proper cleaning of equipment.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Wall or wall covering underneath hand sink is not smooth and easily cleanable and is not tightly sealed around the RFP board..
    Correction: Repair or replace wall or wall covering to make it smooth and easily cleanable.
