Color coded cutting boards used for preparing chicken, red meats, seafood and vegetables. Ice baths used to cool foods when necessary.

Observed different colored cutting boards used for different food products. Raw meats and ready-to-eat foods stored separately in walk-in cooler. Vegetables and meats stored separately in grill preparation unit. Cleaning schedule in place for entire firm. Menus cleaned daily. Separate fryers used to prevent cross contamination and possible allergens. Offering vegetarian and healthier food choices and food products when requested. All foods made in house.
