    Observation: The operator is using a sanitizer, Floral Scent Clorox, and is not using the product in accordance with manufacturer's guidelines.
    Correction: Immediately discontinue the use of Floral Scent Clorox until its operation is within the manufacturer's guidelines. Initiate manual wash, rinse, and sanitize method utilizing on of the known approved sanitizing chemicals Chlorine, Iodine, or Quaternary Ammonium to properly clean and sanitize equipment and utensils.

    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

    Observation: The compartment(s) of the manual warewashing sink was observed used for drying a mop.
    Correction: A warewashing sink may not be used for handwashing or dumping mop water or drying mops due to risk of exposure of food or food contact equipment and utensils to contamination.
  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: plastic tongs and two beverage pitchers.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
