Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site) Observation: Pork sausage links hot holding at improper temperatures in that they were observed hot holding inside of convection oven waiting to be placed on hot holding unit.
Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
Temperature - Food Temperature Measuring Devices - Provided Observation: The person in charge could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (repeated violation) Observation: Due to improper operation of the rinsing procedure of the manual warewashing process, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1700)
Correction: Repair the unit to restore chemical sanitization. Verify the level of sanitizer and continually monitor by the use of test strips/kit.

Correction: Use a quatenary ammonia chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the sanitize basin.
Correction: Provide quatenary ammonia sanitizer at proper concentration of 200 ppm - 400 ppm and immerse or expose food contact surfaces to sanitizing solution for adequate time.
