    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: Short wall by Coolatta machine is not maintained in good repair. Signs of rotting and severe water damage.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repair or replace wall.

    Observation: The plastic cup is not designed and constructed to be durable. Plastic drink cups were being used as scoops in sugar and cinnamon containers.
    Correction: Replace with a scoop with a handle. Equipment and utensils must be capable of maintaining their original characteristics in order to be easily cleaned and to prevent contamination of food.
  • Refuse - Storage Areas, Rooms, and Receptacles, Capacity and Availability
    Observation: There is no refuse container at the area immediately adjacent to the back of house hand sink.
    Correction: Provide a refuse container for the disposal of paper towels at the back of house hand sink.
  • Outer Openings - Protected
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Gap observed under the back door.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
  • Toxics - Separation of Toxics (corrected on site)
    Observation: Containers of grinder cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Bottle observed stored on donut prep table.
    Correction: Containers of grinder cleaner must be separated by spacing or partitioning to prevent contamination of food, equipment, utensils, linens or single service items.
