A follow up will be conducted to ensure prep cooler has been repaired and to make sure facility is keeping up with date labeling, quat sanitizer in three compartment sink was good at 250 ppm.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: Items (wings, beef, chicken) in left prep cooler cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.Cooler needs to be repaired so it is capable of maintaining food temperatures at 41F or below. Said Items relocated to properly working prep cooler
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) (repeated violation)
    Observation: The prepared ready-to-eat (RTE) foods in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Some six pan lids are cracked and chipped which render them no longer easily cleanable.
    Correction: Repair or replace said lids to permit easy cleaning.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Hand sink in kitchen was observed in a state of disrepair and damaged (detached from wall)
    Correction: maintain Equipment in good repair. Reattach hand sink to walll and seal to prevent water damage/mold growth. Correct within 90 days.

    Observation: The sanitizer in the three vat sink is too weak (approximately 100 ppm quat).
    Correction: Provide sanitizer in accordance with the directions (corrected to 200 ppm).

    Correction: Correctly post the disclosure portion of the consumer advisory in conjunction with all animal foods that are served raw or undercooked.
