Follow-up. EHS was able to speak with manager who is also a CFM. Necessary training for employees was discussed, employee health policy provided. Violations were able to be corrected.

    Observation: There was no temperature measuring device located in the top compartment of prep table.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Drainboards (repeated violation)
    Observation: The drainboards/utensil racks/storage tables located are not large enough to accommodate all soiled and cleaned items: adjacent mop sink is being used to store soiled equipment .
    Correction: Provide additional drainboards/utensils racks/tables so that all cleaned and soiled utensils and equipment can be properly stored as they accumulate during operation.
  • Warewashing Equipment, Determining Chemical Sanitizer Concentration (repeated violation)
    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
    Correction: Use a test kit chemical test kit to ensure the sanitizing solution is maintained at the proper solution.

Phf's above safe temp were discarded at time of inspection, thermostat was adjusted in top compartment of prep, temp logs must be kept with "time" controls being documented until/if repaired.Service call was placed during inspection. Sanitizer MUST be in use, manually dispense until/if repaired,concentration must be verified with test strips to avoid toxic and/or ineffective level. Sanitizer must be iuse to operate with non dispoSABLE. Employee health policy provided. All violations were discussed for correction with person in charge. Refer to EH supervisor.
