    Observation: The prepared ready-to-eat (RTE) she crab soup in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

06/12/2014Follow-up
New menu has been printed and there is no description/identification of those foods which may be served undercooked or raw. This has been a continuing violation. Follow-up inspection will be conducted to ascertain that this has been corrected. Operator will take measures to close gaps around doors/windows to reduce number of flies.

Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Advised that cloth towels are not to be used/reused to wipe hands while working. THis includes cloth towel on cook's apron and the cloth towel attached to the side of the counter. (corrected) Operator said the certified pest control operator will be advised of presence/location of roaches so that corrective action can be taken. Tracking powder should not be used by operator for this purpose.

    Observation: Employee wearing wrist watch on arm while preparing food.
    Correction: Ensure employees are not wearing jewelry on their arms and hands while preparing food. This section does not apply to a plain ring such as a wedding band.
