The purpose of today's visit is to conduct a routine inspection.
  • Critical: Eating, Drinking, or Tobacco Use / Proper Food Employee Drinking Containers (corrected on site)
    Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.
    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items.--Discarded
  • Hand Drying Provision / Individual, Disposable Towels (corrected on site)
    Observation: Observed that paper towels were not provided at handwashing sink next to three-compartment sink.
    Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing.--Paper towels provided.

The purpose of today's visit is to conduct a risk factor assessment inspection.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: 2dr prep cooler: sour cream, potatoes salad, shredded cheese, cole slaw
    Correction: Potentially hazardous foods (time/temperature controls for safety food) shall be held cold at a temperature of 41°F or below. -Cooling unit ambient temperature drop to 35F and food items for the second testing.
  • Certified Food Manager/Certificate Process (repeated violation)
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action.

    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

The purpose of this visit was to conduct a follow-up to verify employee health policy, proper sanitizer levels. During today's visit sanitizer was measured at 400 PPM.
Obtain a photo ID CFM license.

    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)

    Observation: The following food item was found hot holding at improper temperatures using a calibrated food temperature measuring device: mac and cheese on steam table at 121F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19. MAC AND CHEESE WAS PLACED ON STOVE TO REHEAT BEFORE BEING SET OUT TO HOT HOLD ON STEAM TABLE AGAIN.
  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the quaternary ammonia chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIA, test kit.
  • Critical: Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc.   • Handwashing Sink / Accessible at All Times (corrected on site)
    Observation: The handwashing facility located by the 3 compartment sink is blocked by black trash bags, preventing access by employees for easy handwashing.
    Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use. ITEMS BLOCKING HAND SINK WERE REMOVED.
  • Plumbing / Maintained in Good Repair
    Observation: Plumbing connections under the sanitize compartment in the 3-vat sink are leaking.
    Correction: A plumbing system shall be maintained in good repair.
  • Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
    Observation: The concentration of the chlorine solution was observed in excess of 200 ppm. This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
    Correction: Maintain the concentration of bleach solution at between 50-200 ppm. Verify concentration using the appropriate test kit. TRAINING WAS PROVIDED TO CFM. SANITIZER WAS DISCARDED. NEW SANITIZER AT 50 PPM WAS PROVIDED.

PREOPERATIONAL FINAL INSPECTION
1. The installed self-serve soda dispensing machine has short levers that may lead to customer saliva contamination on beverage contact surfaces. Replace levers with "Push Buttons" before the use of the soda machine.
2.Caulking around the exhaust hood system and on outer sides of the walk-in refrigerator has not been completed.
3. Food protectors at the self-serve BBQ sauce has not been provided. You have three options as follows: (a) Installed approved sneeze guards. (b) Serve the sauce from a self-serve pump. (3) Serve the sauce as an individually pre-packaged product.
*Owner / Contractor shall correct the above listed items and schedule for a final follow up Health Department inspection.
