Also noted were plumbing repairs occurring in the pantry/breakfast dry storage area. Permits were issued to the operator at this time. No violation noted during this evaluation.

Gloves or some kind of barrier such as tongs must be used when handling ready-to-eat foods. Label chemicals when they are moved to a new bottle.
Critical: Hands - Preventing Contamination from Hands* Observation: Employees observed handling ready-to-eat (RTE) food (bread) with their bare hands.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
Light Bulbs Protective Shielding Observation: Light bulbs in the warewashing area not shielded, coated, or otherwise shatter-resistant.
Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

Food being served consist of cereal, muffins, donuts, toast, juice and coffee. A follow-up will occur within the next few days to make sure that the walk-in cooler is working properly. Non-critical violations must be corrected within 30 days.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Milk cold holding at improper temperatures.
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Temperature Measuring Devices Observation: There was no temperature measuring device located in the walk-in cooler.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Equipment - Good Repair and Proper Adjustment (corrected on site) Observation: The best ambient air temperature observed in the walk-in cooler was 51 F. Operator was adjusted the thermostat to hold milk at 41 or below.
Correction: Adjust walk-in cooler to hold potentially hazardous foods at 41 or below.
