    Observation: Observed raw chicken being stored over the cheese in the WIC. PIC rearranged the WIC.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: Quaternary ammonium sanitizer in the wet wiping cloth bucket being applied to food contact surfaces does not meet the requirements. The quaternary ammonium sanitizer measured 400ppm. The manufacturer recommends a concentration of 200ppm. PIC corrected the concentration of the wet wiping cloth bucket to 200ppm.
    Correction: Utilize only quaternary ammonium sanitizer at the proper concentration when applying to food contact surfaces
